Broccoli Corn Bread



  • 1 box Jiffy corn muffin mix
  • 4 eggs beaten
  • 1 small onion, chopped
  • 1 box frozen broccoli, chopped (I chopped it into very small pieces and let it thaw a little)
  • 4 oz. (1 cup) shredded Cheddar cheese
  • 1 stick butter, melted
  • 1/2 cup sour cream


How to Make It

  • Mix all ingredients together in a bowl. Bake in a greased 7 x 11 inch pan at 425 degrees for 25 minutes.
