- 12 eggs
- 1 cup milk (whole milk was suggested, but I used 1%)
- 1 (2 lb) bag frozen hash browns
- 6-8 strips cooked bacon, split into pieces
- 1 1/2 cups reduced fat cheddar cheese
- 1/2 cup diced onion
- 1 tsp. dill
- 1 tbsp. pepper
- 1/2 diced bell pepper (optional)
- In crock pot, line with a liner or spray with non-stick spray. Place one-third of the hash browns on the bottom, followed by one-third of the bacon, cheese,and onion. Repeat twice.
- Mix eggs, milk, pepper, and dill. Pour over crock pot mixture.
- Cook for 8 hours on low.
- Dish up and enjoy! This made enough for our entire family (7 people) and most of us had second helpings. :)
