Quick dessert: Pineapple Pudding

What You'll Need

  • one Pint Full Fat Milk
  • 8-10 tablespoon Chopped Macadamia Nuts (can replace with Almonds or any nuts you like)
  • one Pack White Chocolate Chip Cookies or any Crunchy Cookies
  • tine Chocolate Wafers
  • 2-3 tablespoon Custard Powder
  • 2-3 tablespoon Sugar
  • one Tin Pineapple Ring Tin (in syrup)

How to Make It

  • In a bowl add 4-6 tablespoon of the milk and mix the sugar and custard powder to make a paste ensuring there are no lumps
  • Heat the remainder milk in a non stick pan
  • Add the sugar custard paste to the milk pan and mix well
  • Keep stirring making sure the custard does not burn till it thickens up, normally 6-8 minutes – do not let it get too thick as it will thicken more as it cools
  • Remove of heat and allow to cool
  • In individual serving bowl break a 2-3 cookies into large pieces
  • Top with a sprinkle of the Macadamia nuts
  • Top with a 1-2 tablespoon of the Pineapple tin syrup
  • Next top with a whole Pineapple Ring
  • Whisk the custard well
  • Next top with a few tablespoons of the custard
  • Cut one pineapple ring into chicks and next top with pineapple chunks
  • Sprinkle with more nuts
  • Add two chocolate wafers on one side on the serving dish
  • Serve immediately
